 First, select raw fish, each weighing more than 500g,fish washed with water, remove the head, tail and visceral, treatment process, water temperature not exceeding 20℃. Cook at a temperature of 102-104 DEG C, cook until the fish is well done, and the dehydration rate is 20-25%. Cooking time should be determined according to the size of the raw fish and strictly controlled. The cooked fish should be fully cold and then packed later. The tank must be clean, no rust, back intact, no leakage. The refined vegetable oil is heated to 180-200℃ and then cooled to 80-90℃, and filtered. Once the tank is loaded, it should be sealed immediately. After sealing the tank, check the vacuum by tank, check whether the seal is good, and finally sterilize.
